1 Basic Fluffy Omelette (See recipe)
4 Prawns/Shrimp (26-30 size)
1 1/2 tablespoons Roasted Garlic Cream Cheese
2 tablespoon Tropical Fruit Salsa
2 tablespoons Red Thai Lemongrass Curry Sauce
1 teaspoon Butter
1 teaspoon Minced Fresh Garlic

Preheat Red Thai Curry sauce
Peel and devein prawns/shrimp
Fill piping bag with roasted garlic cream cheese (plain is fine too)
Melt butter in a saute pan,add fresh chopped garlic and gently cook prawns/shrimp. Set aside but keep warm.
Prepare basic fluffy omelette. Remove from pan placing onto plate. Pipe a line of cream cheese across omelette. Place 3 cooked (warm) prawns/shrimp along cream cheese. Fold omelette in half and place on serving plate. You may elect to place omelette in a 200F oven to allow cream cheese to warm up. If so consider covering with a damp cloth to maintain moisture/fluffiness.
Spoon red thai curry sauce over omelette so it flows over both sides. Place tropical fruit salsa on top of sauce. Arrange final prawn/shrimp onto salsa artfully.
