Zucchini Pie

Ingrédients

  • 3 cups Grated Zucchini
  • 1 small onion
  • 1 cup All purpose flour
  • 1 cup Grated provolone cheese
  • 3 Large eggs, beaten
  • 1/4 cup Vegetable oil
  • 4 tablespoons Grated parmesan cheese
  • 2 teaspoons Chopped fresh basil
  • 1 teaspoon Baking powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper

  1. Preheat oven to 350 degrees
  2. Mix zucchini, flour, provolone cheese, onion, and parmesan cheese in a large bowl.
  3. Add basil (half the amount if dried), baking powder, salt, pepper to zucchini mix.
  4. Add beaten eggs and oil to zucchini mix and blend well.
  5. Spoon mixture into a greased, 10 inch glass pie plate. Bake 45-50 minutes, turning once or twice until golden brown. Cool 10 minutes before slicing.
