Serendipity Bed and Breakfast
Zucchini Pie: Breakfast-Brunch

3 cups Grated Zucchini
1 small onion
1 cup All purpose flour
1 cup Grated provolone cheese
3 Large eggs, beaten
1/4 cup Vegetable oil
4 tablespoons Grated parmesan cheese
2 teaspoons Chopped fresh basil
1 teaspoon Baking powder
1 teaspoon Kosher salt
1/2 teaspoon Freshly ground black pepper
Preheat oven to 350 degrees
Mix zucchini, flour, provolone cheese, onion, and parmesan cheese in a large bowl.
Add basil (half the amount if dried), baking powder, salt, pepper to zucchini mix.
Add beaten eggs and oil to zucchini mix and blend well.
Spoon mixture into a greased, 10 inch glass pie plate. Bake 45-50 minutes, turning once or twice until golden brown. Cool 10 minutes before slicing.
