Ricotta-Cottage Cheese Pancakes: Breakfast-Brunch

1 cup flour
2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 cup ricotta cheese
1 cup cottage cheese
3/4 cup milk
1 teaspoon vanilla
Stir together dry ingredients in medium size bowl.
Process wet ingredients in blender until smooth
Add blended ingredients to dry mix, stir just until blended.
Heat griddle over medium heat. Lightly grease.
Drop batter onto greased hot griddle. When cakes are bubbly, flip them over. Serve with syrup and fresh fruit.
