Heat oven to 350os. Wisk together egg, and buttermilk
Sift dry ingredients together
Add chilled butter to dry ingredients - cut in and then rub so you get small pebbles.
Add wet ingredients to dry and blend together. Add a little more flour if it is too wet
Pat into a big circle and mark the circle into 8 wedges. Cut deeply on two of the scores so make sure the middle gets cooked. Cook on a greased cookie sheet for 25-35 mins. Test the center for doneness. Let cool on a wire rack for 10-15 minutes. Serve with whipped cream and jam.
