Curry Cauliflower Soup: Soup

Servings: 4

Prep time:25 minutes

Ingredients:

  • 4 tablespoons Unsalted butter

  • 1 cup Onion, chopped

  • 2 Granny smith apples, peeled, seeded, chopped

  • 1 Cauliflower head, broken into florets

  • 2 tablespoons Madras Curry powder

  • 1 cup White Wine

  • 4 cups Vegetable or Chicken broth

  • 1 dash Salt and pepper

Step 1:

In 6 quart saucepan add butter, onion and apple and cook on medium heat until onion is soft and translucent. Add cauliflower and curry. Cook 5 minutes, add wine.

Step 2:

Simmer until wine is almost dissolves, add stock. Simmer until cauliflower is tender.

Step 3:

Puree in blender until smooth. Adjust seasoning to taste

Step 4:

Garnish with fresh granny smith apple.
