Rhubarb, Apple, Cranberry Crisp: Dessert
Prep time:30 Minutes
4 cup Rhubarb, cut small
2 cups Apple Gala, Pared, cored, cut into chunks
1 cup Low Bush Cranberry
1 Zest of Orange
1 1/2 cups Sugar
3 tablespoon Minute Tapioca
1/2 teaspoon Cinnamon
Combine to coat with sugar. Pour into baking pan, heat with microwave stove for 5 minutes. Let sit 10 minutes.
Crumb Topping: 1/2 cup flour, 1/2 cup sugar, 1/2 cup Quick Oats, 1/2 cup Old fashioned oats, 1 teaspoon cinnamon, 1/2 cube Butter or margarine Mix all ingredients and cut butter or margarine into dry ingredients until even crumbly.
add 1/2c Walnuts and topping mix over fruit. Spread evenly.
Bake 350 F about 35 to 40 minutes. Let boil at least 10 minutes. Check with tooth pick in center to see if fruit is tender.
Serve with whipped topping and /or Yogart.
