Grilled Egg and Pimento Cheese Sandwich: Breakfast-Brunch

Prep time:20 minutes

Ingredients:

  • 1 lb cheddar cheese, shredded

  • 1/4 lb goat cheese

  • 1/2 cup mayonnaise

  • 6 oz pimento, chopped

  • 2 tablespoons onion, minced

  • 1 teaspoon dijon mustard

  • 1 tablespoon worcestershire sauce

  • 1 jalapeno, finely diced

  • 3/4 teaspoon black pepper

  • 6 eggs cooked over medium

  • 1 dozen bread slices

  • 1 dozen bacon, cooked

Step 1:

Combine first nine ingredients and blend well. Room temperature cheese blends easier.

Step 2:

Butter one side of bread and place on preheated griddle. Top with pimento cheese, then egg, 2 slice of bacon and then more pimento cheese. Place another piece of bread on top and butter.

Step 3:

Cook until golden brown and flip over to toast the other side.
