3 cups Flour
1/3 cup Sugar
7 teaspoons Baking Powder
1 1/2 teaspoons Salt
2 cups Milk
1/3 cup Melted Butter
1/2 cup Vegetable Oil for the Pan
1 1/2 cups New York Maple Syrup for Topping
1 cup Melted Butter for Topping
2 cups Choice of Fruit for Topping
Mix all dry ingredients in large bowl
In separate bowl mix all wet ingredients. (Do not add the vegetable oil as this is used for coating the griddle. Also do not add the extra butter, syrup or fruit listed at the bottom until serving).
Add wet ingredients to dry ingredients.
Blend slowly and completely but, do not beat. Leave lumps as this promotes a lighter pancake.
Coat Griddle or pan with vegetable oil. Get griddle hot but not burning over medium-high heat before adding mix. Use ladle or large spoon to scoop out mix one spoonful at a time and pour onto heated griddle. Let pancakes cook until tiny bubbles form on top.(A few minutes depending on hotness of grill)
The formation of tiny bubbles is a good indication that the pancake is ready to flip over on the other side. Flip and cook the pancakes a minute or two longer depending on heat of pan. Check bottom of pancake to make sure it is not burning.
Remove and serve immediately with warm butter and/or fruit topping and definitely serve with warm New York Maple syrup.
