1785 Inn Tableside Caesar Salad: Salad

Ingredients:

• 

  1 teaspoon Black Peppercorns (in mill)

• 

  1/4 teaspoon Garlic

• 

  3 anchovies

• 

  1 egg (coddled)

• 

  1 lemon

• 

  1/8 teaspoon tabasco

• 

  1/8 teaspoon Worcestershire

• 

  1/8 teaspoon dry mustard

• 

  1/4 cup extra virgin olive oil

• 

  5 tablespoons Parmesan Cheese

• 

  1/2 Head of Romaine Lettuce

• 

  1 cup croutons

Step 1:

Pepper a large wooden bowl. Add garlic & anchovies, and blend.

Step 2:

Add egg, lemon, Tabasco, Worcestershire, mustard, and 2 tablespoons Parmesan.

Step 3:

Mix well, while adding olive oil. Add the romaine, croutons and rest of Parmesan.

Step 4:

Mix ingredients together. Add extra ground pepper if desired. Serve half on each of two plates
