The Brenham House Bed and Breakfast

6 fl oz Herdez Red Picante Sauce
1/4 cup Onion
1/8 cup Green Bell Pepper
8 Corn Tortillas
1 1/2 cups Grated Cheddar & Jack Mixture
1 Diced Garlic Clove
optional- cooked sausage and /or potato
In a large skillet, add a small amount of butter and oil. Add the onion, bell pepper, and garlic and saute.
Cut tortillas into thin strips and add to the skillet. Raise to medium high heat and fry until crisp. Add more oil if needed to keep from burning. After tortillas become crisp empty ingredients from skillet and set aside.
Return skillet to burner, on low heat, and add a pat of butter. Pour the beaten eggs and salsa to skillet and slow scramble. Add optional cooked sausage and/ cooked potato, if desired. Pepper to taste.
After the eggs are set, add the crisp tortillas back into the skillet and cheese. Stir together gently. Serve immediately.
