Blueberry Muffin Pudding: Breakfast-Brunch

Prep time:1 hour

Ingredients:

  • 10 Blueberry Muffins

  • 2 cups Milk

  • 1/2 cup Sugar

  • 4 Eggs

  • 2 teaspoons Cinnamon

  • 1 1/2 teaspoons Vanilla Extract

Step 1:

Crumble left over muffins into a buttered baking dish.

Step 2:

beat together milk, eggs, sugar, cinammon and vanilla.

Step 3:

Pour mixture over crumbled muffins.

Step 4:

Bake for 40 minutes at 350 degrees until pudding puffs and forms a crust.

Step 5:

Spoon warm oudding into individual serving dishes and top with whipped cream and fresh blueberries.
