Brazos Bed and Breakfast
Blueberry Bran Muffins: Bread
1 1/4 cup unbleached white flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 cup fresh or frozen blueberries
1/4 cup canola oil
1 cup low fat buttermilk
3 cups Bran Flakes
Thaw blueberries slightly. In a mixing bowl, mix dry ingredients.
Stir in eggs, oil and buttermilk.
Spray muffin pan. Set oven at 400.
Fold in bran flakes. Gently fold in blueberries. Fill muffin cups 3/4ths full.
Bake for 15 to 20 minutes. Serves 6.
