Puffy Fruit Pancake: Breakfast-Brunch
Prep time:30 minutes
1 cup blackberries
6 tablespoons butter
1/3 cup brown sugar
1 teaspoon cinnamon
1 1/2 cups milk
1 1/2 cups flour
1 1/2 teaspoon vanilla
Prehat oven to 425 degrees. Melt butter in saute' pan, add sliced peeled apples, and berries, til tender but firm, add sugar and cinnamon.
Butter a 10-12 inch round pie pan well. Put fruit in bottom of dish. In blender mix eggs, milk, flour,vanilla, and a little more brown sugar 2 tlb. or so, blend well.
Pour custard over fruit, aprinkle with more cinnamon, bake 20-25 minutes til puffy and brown, and middle is done.
Let stand 10 minutes before cutting, sprinkle with powdered sugar, and serve with maple syrup or a fruit syrup.
