1/4 lb butter
8 tablespoons flour
4 cups milk
3 tablespoons chives
3 tablespoons finely chopped onion (optional)
2 teaspoons McCormick "All-Purpose" seasoning
garlic salt, to taste
8 poached eggs
4 lightly toasted english muffins, buttered
lightly sauteed spinach (optional)
4 large slices Velveeta cheese
8 sausage patties
Melt butter in saucepan, add flour stirring constantly. Quickly add milk. Cook over medium heat, stirring constantly, until sauce becomes creamy smooth and desired thickness. Add cheese and seasonings stirring until cheese melts.
Stack 1/2 buttered english muffin, sausage patty and poached egg on plate. Place sauteed spinach on top of poached egg. Pour sauce over all and top with fresh dill and/or finely chopped tomato with fresh dill.
