Banana Stuffed French Toast

Ingrédients

  • 4 slices Challah bread, cut 1-1/2" thick
  • 2 bananas, sliced
  • 2 eggs, large
  • 1/2 cup whole milk
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • Maple syrup

  1. Combine 1/2 tsp of cinnamon with the sugar and set aside.
  2. From the bottom side of the bread, use a serrated or steak knife to cut a pocket in the bread, leaving the top and sides intact. Stuff each piece of bread with approximately 1/2 banana.
  3. Whisk milk and eggs together. Add vanilla and remaining cinnamon. Dip each slice of bread several times into the mixture to coat fully.
  4. Spray a nonstick griddle or pan with nonstick spray and heat. Cook French toast over medium heat 3-4 minutes per side, or until golden brown.
  5. Remove from heat and transfer to a separate plate. Roll each slice in cinnamon sugar. Serve with warmed maple syrup.
