Peach French Toast: Breakfast-Brunch

1 1/2 cups Light Brown Sugar, Packed
1/2 cup Butter or Margarine
1 can Peaches, Sliced
10 Thick Slices Italian or French Bread
1/2 cup Milk
1 tablespoon Vanilla
Spray the sides of a 9"X13" baking dish. Place brown sugar and butter in pan and on very low heat, melt together on top burner of stove. Stir often.
Drain peaches. Place slices over brown sugar mixture.
In separate bowl, combine eggs, milk and vanilla. Beat on low speed until well blended.
Dip each bread slice into egg mixture and place on top of peaches until pan is filled. Pour any leftover egg mixture evenly over bread. Sprinkle with cinnamon. Cover and refrigerate over night.
Preheat oven to 350. Bake uncovered for 45 minutes. This wonderful breakfast entree' can also be made with apple slices, bluberries, or strawberries.
