Pumpkin Love Muffins: Bread

Ingredients:

• 

  2 1/2 cups cake flour

• 

  1 cup sugar

• 

  2/3 cup brown sugar

• 

  2/3 cup butter

• 

  1 teaspoon baking powder

• 

  1 teaspoon baking soda

• 

  1/4 teaspoon nutmeg

• 

  3/4 teaspoon salt

• 

  3/4 teaspoon cinnamon

• 

  1/2 teaspoon ground cloves

• 

  1/4 teaspoon pumpkin pie spice

• 

  2 eggs

• 

  1 lb pumpkin (mashed or canned)

• 

  1/2 cup milk

Step 1:

Preheat the oven to 375 degrees. In an electric mixer, cream the butter and sugars until light.

Step 2:

Add the eggs, one at a time.

Step 3:

Add the pumpkin.

Step 4:

In a separate bowl, combine the flour and all of the spices and mix together.

Step 5:

Alternately add the dry ingredients and the milk to the mixer on low speed until just combined. Pour into greased and floured muffin tins and bake for 15 minutes. Enjoy!
