Smushed Potatoes: Breakfast-Brunch

Prep time:1 hour

Ingredients:

  • 8 small potatoes

  • 1 tablespoon olive oil

  • 1/4 cup Parmesan or Asiago Cheese

  • 1/4 teaspoon garlic powder

  • 1/8 teaspoon chilli powder

  • 1/8 teaspoon sea salt

Step 1:

Cook in boiling water, 6 small potatoes Cool. With the palm of your hand push down. Brush with olive oil. Sprinkle with Parmesan/Asiago cheese. If desired, sprinkle with chilli powder (give them a little kick). Sprinkle on sea salt. Bake 400 degrees for 15 minutes Turn over. Brush again with olive oil and sprinkle with chopped parsley. Bake 400 degrees for 10 minutes. You can even use these as appetizers if the potatoes are very small.
