Absolutely the Best Blueberry Muffins Ever!: Bread
Prep time:30 min
1 cup sugar
1/2 cup vegetable oil
1/2 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup sour cream
1 cup blueberries, fresh or frozen
Beat eggs, gradually adding sugar, till thick and lemon-colored. Reduce mixer speed; slowly pour in oil and vanilla.
Combine the flour, salt, and baking soda. Stir into the creamed mixture just until dry ingredients are moist; mixture will be lumpy. DO NOT OVERMIX!
Gently fold in blueberries and spoon into muffin cups that have been coated with vegetable spray or lined with paper. Sprinkle with a mixture of sugar-cinnamon.
Bake at 400 for 20 minutes. Makes 18-20 muffins.
