Brulee French Toast with Mascarpone and Fresh Berries: Breakfast-Brunch

Ingredients:

  • 1 French baguette sliced on the diagonal 3/4-inch slices

  • 1 cup Heavy cream

  • 4 Eggs

  • 1 cup Powdered sugar - half for batter - half for cream

  • 1 teaspoon Vanilla

  • 1 pinch Salt

  • 2 pints Mixed berries of your choice

  • 1 cup Cream cheese

  • 1/2 cup Mascarpone cheese

  • 1 cup Sugar for brulee

Step 1:

Mix sweet cream by softening cream cheese before mixing with mascarpone and powdered sugar to taste. (Hold back a small amount of powdered sugar for finishing.) Place creme mixture in piping bag with a star tip (for decorative effect). Set aside.

Step 2:

Mix heavy cream, eggs, 1/2c. powdered sugar,and vanilla to create batter. Soak bread slices till batter is absorbed into each slice. Using a non stick pan, saute' slices on both sides in butter till golden. Then place in 350 degree oven for 3-4 minutes.

Step 3:

Remove toast from oven & blot on a clean toweling. Using a spoon, dust the tops of the toast with a good layer of brulee sugar and immediately torch the sugar with a kitchen torch (or under broiler using a watchful eye) until browned.

Step 4:

Place brulee'd toast on plate. Then pipe the sweet cream onto the plate in several places, applying your own artistic design style. Dust the entire dish with powdered sugar & freckle with a handful of whatever fresh seasonal berries you have in your area. Serve with real Maple syrup!
