Mexican Eggs

Ingrédients

  • 6 Green chiles, diced
  • 1 1/2 cups Cheese, Colby Jack, grated
  • 9 Eggs
  • 1 1/2 cups Milk
  • 3/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 clove Garlic, minced
  • 1 teaspoon Cumin, ground
  • 1 teaspoon Cilantro

  1. Preheat oven to 350 degrees. Spray the bottom and sides of three 6-inch ramekins with non-stick spray. Divide the diced chiles evenly in the three ramekins. Place 1/2 cup of the grated cheese in each ramekin. Place remaining ingredients in a blender and whirl until blended. Divide egg mixture evenly between the three ramekins. Place into preheated oven and bake approximately 40 minutes, or until puffed and golden brown.
  2. Remove from oven and allow to cool for a few minutes before cutting. Cut each ramekin into fourths and serve two pieces to each person.
  3. We serve this dish with guacamole, salsa and sour cream.
