Mansion Inn's Oven Baked French Toast: Breakfast-Brunch

Ingredients:

• 

  1/2 cup seedless raspberry or blackberry preserves

• 

  6 eggs well beaten

• 

  2 cups milk

• 

  1/4 cup sugar

• 

  2 teaspoons vanilla

• 

  2 teaspoons cinnamon

• 

  1 teaspoon freshly ground nutmeg

• 

  4 English muffins, split

• 

  1 package cream cheese

• 

  fresh raspberries or blackberries for garnish

Step 1:

Spread the bottom half of the muffin with cream cheese, then the preserves. Put the top on each muffin and place in an 8" glass baking dish.

Step 2:

Combine the beaten eggs with the sugar, milk, vanilla, cinnamon and nutmeg.Pour the mixture over the muffins in the baking dish.

Step 3:

Refrigerate overnight. Bake at 325 degrees for 40-45 minutes.

Step 4:

Plate up each serving topped with fresh raspberries or blackberries.
