Baked Breakfast Oatmeal: Breakfast-Brunch
2 3/4 cups Old Fashioned Quaker Oats (uncooked)
3/4 cup Firmly packed brown sugar
3/4 cup Raisins, dried cranberries, cherries, &/or dates
2 teaspoons Ground cinnamon
3 1/3 cups Skim milk/Lactose-free milk
4 Egg whites, beaten until foamy
1 tablespoon Olive/Vegetable oil
1 tablespoon Pure vanilla
Heat oven to 350*F. Spray an 8-inch square baking dish with non-stick cooking spray.
In large bowl, combine oats, sugar, dried fruit, cinnamon; mix well. Add combined milk, egg whites, oil and vanilla; mix well. Pour into baking dish.
Bake 45-55 minutes or until center is set and firm to the touch. Cool slightly.
Serve plain or topped with milk, yogurt, fruit, additional brown sugar, if desired.
Store leftover oatmeal in tightly covered bowl in refrigerator.
