Baked Breakfast Oatmeal: Breakfast-Brunch

Ingredients:

  • 2 3/4 cups Old Fashioned Quaker Oats (uncooked)

  • 3/4 cup Firmly packed brown sugar

  • 3/4 cup Raisins, dried cranberries, cherries, &/or dates

  • 2 teaspoons Ground cinnamon

  • 3 1/3 cups Skim milk/Lactose-free milk

  • 4 Egg whites, beaten until foamy

  • 1 tablespoon Olive/Vegetable oil

  • 1 tablespoon Pure vanilla

Step 1:

Heat oven to 350*F. Spray an 8-inch square baking dish with non-stick cooking spray.

Step 2:

In large bowl, combine oats, sugar, dried fruit, cinnamon; mix well. Add combined milk, egg whites, oil and vanilla; mix well. Pour into baking dish.

Step 3:

Bake 45-55 minutes or until center is set and firm to the touch. Cool slightly.

Step 4:

Serve plain or topped with milk, yogurt, fruit, additional brown sugar, if desired.

Step 5:

Store leftover oatmeal in tightly covered bowl in refrigerator.
