Apple Ginger Upside-Down Cake: Breakfast-Brunch

Ingredients:

  • 1/4 cup unsalted butter

  • 1/4 cup light brown sugar

  • 2 tablespoons crystallized ginger

  • 2 tablespoons raisins

  • 1 Granny Smith apple

  • 1 tablespoon lemon juice

  • 1/2 cup all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 2 eggs

  • 1/3 cup sugar

  • 1/2 teaspoon vanilla

Step 1:

Preheat oven to 400 degrees. Pour butter into an 8-inch cake pan, swirl, sprinkle with brown sugar, ginger, and raisins. Peel, core, and slice apple thin.

Step 2:

Toss apple slices with lemon juice, arrange over the raisins. IN a bowl, sift flour, baking powder, salt, and cinnamon.

Step 3:

In another bowl, beat eggs, sugar, and vanilla for 3 minutes. Fold in the flour mixture till well-mixed, don't beat. Pour over apple slices. Bake 20-25 minutes.

Step 4:

Run a knife around the edge, invert the cake. Cool then sprinkle with powdered sugar.
