Strawberry Struesel Muffins

Ingrédients

  • 1 1/2 cups Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Sugar
  • 1 Egg, beaten
  • 1/2 cup Milk
  • 1/2 cup Butter, melted
  • 1 1/4 teaspoons Almond Extract
  • 1 cup Sliced Strawberriers
  • Struesel Topping
  • 1/2 cup Sugar
  • 1/2 cup Chopped Blanced Almonds, toasted
  • 1/4 cup Flour
  • 2 tablespoons Butter, melted
  • 1/8 teaspoon Almond Extract

  1. Spray muffin pan or use paper liners. Preheat oven to 350 degrees. Combine first 4 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk, butter and almond extract; add to dry ingredients, stirring just until moistened. Fold in strawberries. Spoon batter into muffin pan, filling three-fourths full.
  2. Prepare struesel topping. Combine all struesel ingredients in a bowl and mix well. Sprinkle Streusel Topping evenly over batter. Bake at 350° for 20 to 25 minutes. Cool in pan on a wire rack 10 minutes. Remove from pan, and let cool completely on wire rack.
