Ed's Cheddar Cheese Raisin Muffins: Bread

Ingredients:
2 cups All Purpose Flour
3 1/2 teaspoons Baking Powder
1 cup Grated Cheddar Cheese
1 cup Seedless raisins
1 teaspoon Salt
1 Large Eggs
1/4 cup Melted butter
1 cup Milk
1/3 cup Ricotta Cheese
1 1/2 teaspoons Herbs (Penzys Fox Point Seasoning)
1 tablespoon Fresh Herbs (parsley, dill & rosemary)
1 tablespoon Paprika or (Penzey's Old World Seasoning)
Step 1:
Preheat oven 400 degrees
Step 2:
In large bowl, blend together flour, cheese, raisin, baking powder, salt, dry herbs and fresh herbs.
Step 3:
In Medium bowl, beat eggs, melted butter, milk and ricotta cheese. Combine the two bowls blending until dry ingredients are just moistened.
Step 4:
Spoon batter into muffin tin 3/4 full. Sprinkle top with paprika. Cook immediately or freeze in tin.
Step 5:
Bake for 15 minutes. If frozen bake at 350 for 20-25 minutes.
