Lemon Curd Sauce: Breakfast-Brunch
Prep time:5 minutes
1 cup butter
2 cups sugar
1 zest of whole lemon
1/2 cup water
6 tablespoons lemon juice/fresh
1 cup whipped cream
8 mint leaves
In a saucepan, melt butter over medium heat. Beat eggs well. Add ALL ingredients at once to butter(except whipped cream & leaves, these are for garnish).
Stir constantly. Heat over medium heat for (5 minutes). Sould be gravy-like texture, Remove from heat.
Bake waffles. Drizzle with sauce. Garnish with whipped cream, leaves, and twist of lemon slice. Enjoy!
