Jeanne's cornbread casserole: Breakfast-Brunch
1 can whole kernel corn
1 can creamed style corn
1/2 cup salsa
1/2-3/4 c. sour cream
1 cup shredded cheese
1 box Jiffy cornbread mix
1/4 cup diced green chilies
Mix all the ingredients together by hand in a large bowl; save 1/2 the cheese. Optional ingredient: 1/4-1/2 c. melted butter.
Pour mixture into one or 2 greased baking dishes; put remaining cheese on top.
Bake at 350 degrees for 30 - 40 minutes. Serve hot or at room temperature. Serve as main dish or side dish.
