1900 Style Scrambled Eggs: Breakfast-Brunch

Ingredients:
18 Eggs
1/4 cup Butter
Step 1:
Place butter in skillet and heat on med/high until just starting to brown
Step 2:
Break eggs into pan without stirring yolks
Step 3:
Stir the whites until almost cooked without breaking the yolks
Step 4:
Stir the yolks. This will mix into the whites and make them rich and buttery in flavor.
Step 5:
Do not overcook. Serve immediately. This way of cooking eggs requires correct timing, but it makes the eggs taste so much better than if you mixed them up before cooking them. Enjoy!
