Buttermilk Pancakes: Breakfast-Brunch

Prep time:10 minutes

Ingredients:

  • 1 Egg

  • 1 1/4 cup Buttermilk

  • 3/4 cup White Flour

  • 1/4 cup Yellow Cornmeal

  • 3 tablespoons Melted Butter

  • 1/2 teaspoon Salt

  • 2 tablespoons Baking Powder

  • 1/2 teaspoon Baking Soda

Step 1:

Mix the egg, buttermilk and melted butter in mixing bowl

Step 2:

Sift together flour, cornmeal, baking powder, baking soda and salt

Step 3:

Add dry ingriedience to egg/buttermilk mixture and mix well, at medium speed.

Step 4:

Let the mixture stand for a few minutes while the griddle heats up to temperature. You will see the mixture bubble a little, that is OK. Griddle temperature should be hot.

Step 5:

Use a ladle to put approximately 1/8 cup mixture on the hot griddle, when they start to bubble gently flip them over until they are golden brown about a minute. Serve while hot so the pancakes are fluffy. Enjoy!
