Southwestern Breakfast Casserole: Breakfast-Brunch

1 lb Pork sausage
4-6 flour or white corn tortillas
1 small can chopped and peeled mild green chiles
1 lb shredded mozzarella cheese
12 large eggs
1 Tbs ground cumin
2 1/4 cups milk
Cook 1 lb sausage in pan, I add Weber Mesquite seasoning mix to kick it up. Drain and set aside.
In a 9 by 12 or 12" oven proof dish, grease with olive oil and put in a sparse layer of chopped, peeled green chiles. Cut flour or white corn tortillas into strips and spread sigle layer in dish.
Add layer of cooked drained sausage. Sprinkle with shredded mozzarella cheese. Do all again without olive oil for second layer.
Mix 12 lg eggs, 2 to 2 1/5 cups Milk and 1 tablespoon ground cumin and add mixture to cover ingredients.
Cook in 365-375 deg oven until crust is golden brown. Optional: you can add sliced Roma tomatoes if desired. Serve and enjoy.
