Baked Eggs with Four Cheeses: Breakfast-Brunch

1 cup Half and half
2 teaspoon Sugar
1/2 lb Grated sharp cheddar cheese
1/2 lb Grated monterey jackcheese
4 oz Neufchatel, cubed
1 lb Cottage cheese, small curd
2/3 cup Butter, melted
1/2 cup Flour
1/2 teaspoon Baking powder
1/2 teaspoon Spike (or assorted herbs)
Beat together eggs, milk, and sugar. Add cheeses and melted butter and mix well.
Mix in flour and baking powder.
Pour into 3 quart baking dish sprayed with non-stick coating.
Cover and refrigerate overnight.
Bake 45-50 minutes at 350 degrees or until knife inserted in center comes out clean. Cut into rectangles.
