Westbrook Inn B&B's Squash Flower Omelettes: Breakfast-Brunch

2 teaspoons Fresh Parsley
dash Salt & Pepper
Dash Crushed Red Pepper
2 teaspoons Fresh Minced Garlic
1/2 teaspoon Butter
3 tablespoons Grated Sharp Chedder Cheese
3 Freshly Picked Squash Flowers (washed)
Whisk eggs and seasonings in a small bowl.
In a small skillet on medium high heat, cook garlic in butter for two minutes. Remove and save.Turn heat down to medium heat.
Add egg mixture, sprinkle cheese on one half, top with squash flowers and garlic and cook untill set.
Flip omelette and cook a few additional minutes untill cheese sets.
