Denver Frittata: Breakfast-Brunch
1/4 cup Green Peppers, diced
2 tablespoons Onion, diced
3/4 cup Smoked Ham
1 cup Cheddar Cheese (shredded)
1 teaspoon Salt
1/2 teaspoon Pepper
Grease a 10 inch skillet. Saute pepers and onions. Add ham until hot.
Mix egg, salt & pepper. Pour over ham mixture.
Let eggs cook, lifting edges to let uncooked eggs run underneath.
When eggs are firm, top with cheese & place in broiler or oven till cheese is melted and center is done.
