frozen O’Brien Potatoes
sage flavored bulk sausage, cooked
hard boiled eggs, chopped
condensed cream of mushroom soup
2/3 soup can milk
Pepper, to taste
2 cups Colby-Jack cheese, shredded
8 tomato slices, thinly sliced
3 green onions, chopped
In 8 16oz. greased ramekins, or a 9x13” greased casserole, layer potatoes, sausage and eggs. Combine soup, milk and pepper, then pour over other ingredients. Sprinkle top with cheese. Cover with foil. Bake in a 350 degree oven 45-55 minutes.
Remove from oven, garnish with tomato slices and green onions. Serve hot.
*This can be prepared the night before and refrigerated until you’re ready to bake it.
