Apple Cream Coffee Cake: Breakfast-Brunch

Ingredients:

  • 1/2 cup chopped nuts

  • 2 teaspoon cinnamon

  • 1 1/2 cup sugar

  • 1/2 cup margarine-softened

  • 2 eggs

  • 1 teaspoon vanilla

  • 2 cups flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup sour cream

  • 1 large apple chopped

Step 1:

Combine nuts, 1/2 c. of the sugar and cinnamon and set aside. Now cream margarine & add rest of sugar. Beat. Add eggs one at a time, beat well. Add vanilla. Combine dry ingred. and add alternately with sour cream, beating well each time. Spread half in well greased tube pan (10 in)

Step 2:

Now put apples & 1/2 of cinn./sugar mixture on this. Then spread remaining half of batter on this and add the rest of sugar/cinn. mixture. Bake @ 375 deg. for 40 min. Let stand 30 min. before removing from pan.
