Eggs Oaxaca: Breakfast-Brunch

Servings: 8

Prep time:25 minutes

Step 1:

lightly saute red, orange, yellow, green peppers, and then mix with onions which have been caramelized in another pan

Step 2:

mix with eggs stirred in butter and then bake inside of red/tomato tortilla triangle points for about 10 minutes

Step 3:

finish off by melting cheese as glaze

Step 4:

add sour cream, fruit salsa, and optional hot hot pepper salsa

Step 5:

accompany with Aztec Potatoes; 3 kinds of potatoes featuring sweet potato cooked with cream and butter in a sauce pan...and side of glazed sausage
