Ingrédients

  • 12 slices virginia baked ham
  • 1 dozen large eggs
  • 1/2 cup zuccinni, summer squash,red/green pepper, onion
  • 1/2 stick butter
  • 1/2 cup sour cream
  • 1/2 teaspoon pepper
  • 1 teaspoon fresh or dried tarragon
  • vegtable spray

  1. Pre heat oven to 375. Slice all of the vegatables small juilliene style
  2. melt butter in frying pan and saute vegtables until tender. About 5 minutes
  3. add sour cream, pepper and tarragon. Remove from heat.
  4. Spray a 12 cup muffin tin with vegtable spray. Place one slice of ham in each cup of muffin tin forming a small nest. Fill each ham nest with one tablespoon of vegtable mixture.
  5. Crack an egg into each one of the ham nests covering the vegtables. Sprinkle tarragon on the eggs and bake for 20-30 minutes depending on how you like your eggs cooked. Remove from tin and serve with english muffins.
