Ham and Herb Cheese Frittatas: Breakfast-Brunch

1 tablespoon Butter
3 or 4 Green Onions - chopped
1 cup Ham (cubed)
4 heaping tablespoons Herb Cheese (Boursin, etc) - cubed
1/4 cup Half and Half
Preheat oven to 350 degrees. Grease 4 ramekins. Melt butter and saute onions for a few minutes. Add ham cubes and saute for about 3 minutes. Divide equally among ramekins.
Add cheese equally among ramekins. Beat eggs and half & half with wisk and divide among ramekins. Stir to distribute ingredients.
Bake in preheated oven until puffed and set, aprox 30 to 40 minutes. Serve immediately.
Vegetarian Adaptation: Replace ham with precooked broccoli or vegetable of choice.
