Apple Sausage Cheddar Quiche: Breakfast-Brunch
Prep time:20 minutes
1 9 inch unbaked pie shell
1/2 lb sausage (sweet, spicy or mild)
1/2 cup chopped onion
3/4 cup shredded tart apple
1 tablespoon lemon juice
1 tablespoon sugar
1 cup shredded cheddar cheese
1 1/2 cups half-and-half
1/4 teaspoon salt
Crumble the sausage into a large skillet and cook over a medium heat until browned. Add the onion and saute until tender. Drain well.
Add the shredded apple, lemon juice and sugar to the sausage and onions. Cook over a medium-high heat stirring constantly until the apple is tender and liquid evaporated.
Spoon the sausage mixture into the pie shell and cover with cheese. At this point you may cover and refrigerate overnight if desired.
In a medium bowl blend eggs, half-and-half and salt and pour over the sausage and cheese.
Bake in a preheated 375 degree oven for 35-45 minutes until a knife inserted in the enter comes out clean. Let stand a few minutes to set before serving.
