1/2 cup lowfat milk
1 cup Grafton Village 2 year Cheddar Cheese
3/4 cup chopped fresh tomatoes
1/2 cup sliced green onions
1 handful baby spinach
optional optional sliced mushrooms or other veggies
Heat oven to 400. Prepare vegetables and sort on plate with grated cheese. Beat eggs & milk together in small bowl.
Place individual au gratin dishes in oven with pat of butter in each - only long enough to bring butter to the browning point. Then pour egg mixture evenly into hot dishes (while in oven). Place spinach on top of each dish then sprinkle cheese evenly over each dish on top of spinach, then other vegetables. Close oven and bake about 12 minutes.
They're ready when puffy and browned on top. Remove immediately and serve on plates protected with cloth doily or hot mat. Another Crosby House favorite!
