Lemon Cream Waffles: Breakfast-Brunch

1 egg, room temperature and separated
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1 tablespoon sugar
1 teaspoon lemon peel
2/3 cup cream
2 tablespoons fresh lemon juice
4 tablespoons butter, melted and cooled
Beat egg white in a small bowl until stiff; set aside.
Mix together dry ingredients; set aside.
Combine egg yolk, cream, lemon juice and butter. Add to dry ingedients, mixing until just blended.
Fold in beaten egg white until just mixed, being careful not to overbeat.
Bake on a preheated waffle iron about 5 minutes, until steaming stops. Garnish with whipped cream and lemon slices. Serve with real maple syrup.
