Applewood Morning Casserole: Breakfast-Brunch
Prep time:15 minutes
2/3 cup chopped yellow and red peppers
1/2 cup asparagus cut into 3/4 inch pieces
3/4 cup thawed frozen hash brown potatoes
1/4 cup crumbled goat cheese
7 lightly beaten eggs
1/3 cup chopped mushrooms-optional
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground mustard
1 tablespoon dried chives
1/3 cup grated sharp cheddar cheese
Thaw hash browns and sprinke in botton of oiled 6x12 or 1.5 qt casserole dish
Preheat oven to 375 degrees
Saute veggies and mushrooms if used for about 5 minutes.
Place veggies in casserole over hash browns. Sprinke goat cheese over veggies, beat the eggs and add seasonings. Pore the beaten eggs over the veggies. Top with cheddar cheese.
Bake at 375 for 40 inumtes or until lightly browned and the eggs are set.
