Applewood Morning Casserole: Breakfast-Brunch

Prep time:15 minutes

Ingredients:

  • 2/3 cup chopped yellow and red peppers

  • 1/2 cup asparagus cut into 3/4 inch pieces

  • 3/4 cup thawed frozen hash brown potatoes

  • 1/4 cup crumbled goat cheese

  • 7 lightly beaten eggs

  • 1/3 cup chopped mushrooms-optional

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

  • 1/8 teaspoon ground mustard

  • 1 tablespoon dried chives

  • 1/3 cup grated sharp cheddar cheese

Step 1:

Thaw hash browns and sprinke in botton of oiled 6x12 or 1.5 qt casserole dish

Step 2:

Preheat oven to 375 degrees

Step 3:

Saute veggies and mushrooms if used for about 5 minutes.

Step 4:

Place veggies in casserole over hash browns. Sprinke goat cheese over veggies, beat the eggs and add seasonings. Pore the beaten eggs over the veggies. Top with cheddar cheese.

Step 5:

Bake at 375 for 40 inumtes or until lightly browned and the eggs are set.
