Morning Glory Muffins: Breakfast-Brunch

2 cups all purpose flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 apple, pared, cored, and grated
1/2 cup raisins
1/2 cup coconut, shredded
1/2 cup pecans, chopped
1 cup carrot, grated
1 cup vegetable oil
2 teaspoons real vanilla extract
Grease and flour 24 muffin tins. Preheat the oven to 350 degrees
Sift flour, sugar, baking powder, cinnamon, and nutmeg into a large mixing bowl. Add the grated apple, raisins, coconut, pecans, and carrot. Mix together thoroughly until the mixture resembles a coarse meal.
In a separate bowl, beat the eggs slightly and add the vegetable oil and vanilla extract. Pour the wet ingredients into the dry ingredients and quickly combine. Fill the muffin tins with the batter until they are 3/4 full.
Bake for 20 to 25 minutes or until the muffins are golden brown. Makes 24 muffins.
