Streusel Topped Blueberry Cake: Breakfast-Brunch

Ingredients:

  • 3 tablespoons shortening

  • 1 cup sugar

  • 1 egg

  • 1 3/4 cups flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1 1/2 cups fresh blueberries

Step 1:

Cream shortening with sugar; beat in egg. Sift flour, baking powder and salt together in separate bowl. Add dry ingredients to shortening/sugar mixture, alternating with milk.

Step 2:

Springkle washed, drained blueberries with a little flour to keep them from sinking, and stir into batter. Pour batter into greased and lightly floured pan, 11 x 7 inches in size.

Step 3:

Mix together 1/2 cup flour, 1/2 cup sugar, 2 tablespoons soft margarine, and 1 teaspoon cinnamon until crumbly to make streusel topping.

Step 4:

Sprinkle batter with streusel topping.

Step 5:

Bake in 350 degree oven until cake test dones, about 40 minutes.
