White Chip Macadamia Coconut Crisps

Ingrédients

  • 1 2/3 cup flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup butter, softened
  • 3/4 cup dark brown sugar
  • 1/3 cup white sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 2 cup white chocolate chips
  • 1 cup sweetened flaked coconut
  • 3/4 cup macadamia nuts

  1. Cream butter, sugars, vanilla and egg until pale yellow.
  2. Sift baking powder, salt and baking soda into flour. Slowly add to wet ingredients and mix just to combine.
  3. Add chips, coconut and nuts (batter will be thick).
  4. Drop by small ice cream scoofuls onto parchment lined baking sheet and bake at 325 for 8-10 minutes, careful not to overbake. Cookies will remain chewy if not overcooked and will get crispy if cooked longer. Our guests like them both ways!
