Williamsburg Sampler "Skip Lunch (R) Breakfast-Brunch: Breakfast-Brunch

Ingredients:

  • 5 tablespoons butter (separated)

  • 2 tablespoons flour

  • 2 cups milk

  • 1/2 tablespoon salt

  • 1/8 tablespoon pepper

  • 1, 4 oz can mushrooms, drained

  • 1/2 cup shredded American cheese

  • 1 cup chopped Canadian bacon

  • 1/4 cup green onions

  • Paprika

  • 1 dozen eggs, beaten

  • Bread crumbs

Step 1:

Combine 2 tablespoons butter and flour, blend until smooth. Cook over low heat until bubbly. Gradually stir in milk, cook until smooth and thick, stirring constantly. Add salt, pepper, cheese, heat and stir until cheese melts. Set aside.

Step 2:

Saute bacon and onions in remaing butter until onions are tender. Add eggs; cook until set, stirring to scramble. Fold in mushrooms and cheese sauce. Spoon egg mixture into lightly greased 12x7 inch baking dish. Top with bread crumbs, sprinkel with paprika.

Step 3:

Bake at 350 degrees for 30 minutes. Serves 8. May be prepared ahead and heated to serve.
