Salsa Omelette

Ingrédients

  • 1/2 cup mild salsa
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 8 eggs
  • 1/2 cup small curd cottage cheese
  • 1/2 cup sour cream

  1. Spray an 8 inch pie pan with nonstick cooking spray. Spread the salsa over the bottom of the pie pan; sprinkle the Monterey Jack and Cheddar cheeses on top.
  2. In a medium bowl, whip together the eggs, cottage chees, and sour cream. Pour the egg mixture over the cheese.
  3. Bake in 350 degree oven for 45 minutes, or until the egg is lightly browned and puffy on top. Serve with cilantro as garnish.
