California Raisin Sour Cream Tart

Ingrédients

  • 3/4 cup sugar
  • 1 1/2 cups sifted flour
  • 1/2 cup plus 2 Tbsp shortening
  • 3/4 teaspoon salt
  • filling
  • 3/4 tablespoon milk or water
  • 3 eggs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1 teaspoon grated lemon or orange peel
  • 1 1/2 tablespoons flour
  • 1 1/2 cups sour cream
  • 1 tablespoon lemon juice
  • 1 1/2 cups dark or golden raisins
  • sweetened whipped cream

  1. Mix together flour and salt, cut in shortening to make coarse crumbs. Add milk a little at a time until pastry is moistened. Shape into a ball and roll into an 11-inch circle. Fit into a 9-inch springform pan or tart pan with removable bottom. Flute rim of shell. Add filling.
  2. Filling: Beat eggs until fluffy, stir in all ingredients except whipped cream. Mix well and turn into pastry lined pan. Bake at 375 degrees 40 to 50 minutes or until barely set in the center. Cool and garnish with sweetened cream.
