Healthy Harvest Granola: Breakfast-Brunch

Ingredients:

  • 3 cups rolled oats

  • 2/3 cup sliced almonds

  • 1/2 cup sunflower seeds

  • 1/2 cup hulled pumpkin seeds

  • 1/2 cup shredded coconut (unsweetened)

  • 2 tablespoons oat bran

  • 2 tablespoons sesame seeds

  • 2 tablespoons wheat germ

  • 1 cup mixed dried fruit

  • 1/2 cup dried banana chips

  • 1/4 cup butter

  • 1/4 cup honey

  • a few dashes of cinnamon & sugar

Step 1:

Preheat the oven to 325 degrees F. Set aside the dried fruits and mix the other dry ingredients in a large bowl.

Step 2:

In a small saucepan, melt butter with honey over low heat, stirring constantly. When melted, pour over oat mixture and stir until combined.

Step 3:

Coat a large jelly roll pan with non-stick spray then spread granola evenly on it. Bake on the middle rack until golden brown, for about 15 minutes. Stir halfway through baking.

Step 4:

While the granola browns, chop the larger dried fruits and banana chips with a large knife. We like to add cherries, golden raisins, and blueberries.

Step 5:

When the granola is done, let it cool in the pan. Then transfer it back to the bowl and stir in the dried fruits. Granola may be kept in an airtight container at cool room
temperature or in the freezer for about 2 weeks. Makes about 6 cups. It's delicious topped with fresh fruit and then served with yogurt or a little milk!
